Midweek I made a day trip to Corpus Christi. My first stop: the Texas State Aquarium, where I watched sea turtles, saw touch tanks, learned about Gulf ecosystems. I lingered at jellyfish tanks, fascinated by their graceful pulses.

Afterward, I walked the Harbor Walk, took photos of ships, spotted pelicans perched along piers, watched waterfront activity. For lunch, I ate at a bayfront restaurant — blackened red snapper, hushpuppies, fresh greens.

On return to The Palms, I simmered my own version of seafood paella — shrimp, clams, mussels, rice, saffron, vegetables — in a wide pan on my RV’s outdoor stove. Neighbors gathered, helping stir, sharing sides, telling travel tales.
